Beetroot & Ricotta Salad

Beetroot/beets, are a great source of iron and a regular feature in our homes. Beets are relatively easy to grow and are worth giving a shot in the vegetable garden. They are versatile, served hot or cold. Red beetroot stains hands, dishcloths, clothes, chopping boards etc., so handle with care. Beetroot goes well with fresh ricotta cheese, which is crumbly and creamy. I prefer to use smaller beets as they tend to be sweeter than the larger ones. This salad is served as an accompaniment to a meal.

Avo Dressing Salad

I enjoy avocados for their creaminess and delicious taste. This Avocado dressing salad is light, crisp and a fantastic accompaniment for fish, steak and chicken dishes. The dressing keeps well, refrigerated for up to four days in an air tight container. Avocados are delicate, bruise easily and should be handled with care. If you are not a fan of raw onion then replace with chives, radish or fennel.

Ugu & Lettuce Salad

Salads can be versatile and this salad is quite simple, using ugu leaf. Ugu is pumpkin leaf and is normally used in cooking vegetable soups in West Africa. This leaf is refreshing and known to have health benefits.

Victoria’s Petal Salad

This is a delicious spring or summer salad I made for Victoria as a side dish and she loved it! I used a Greek salad dressing, but you can use any dressing. If being served as a meal, then add tuna, boiled egg or sliced chicken with lightly toasted pita bread. This salad can keep in the fridge for 24hours, but please do not add any salad dressing.
