Rinse the thepe with cold water and drain the water out using a salad spinner.
Heat the oil on medium heat and fry the onions until translucent, add the pepper & garlic and fry for 2min.
Increase the heat to high, add the thepe, stir into the onion mixture and cook uncovered for 10 min – the thepe will shrink considerably. Please ensure that you have as little liquid as possible.
Season and serve with papa/mealie pap.
